Mr has recently discovered his way around the oven. Among his many adventures he has come up with a number of pretty delicious recipes. This is is one such example! You must have had a number of versions of Stuffed Chicken; well ours comes with an easy to make stuffing and a guaranteed hearty meal in the end. Save this for you next night in, hen you want to do slightly fancy for dinner, and impress your loved ones.
Ingredients:
- Chicken breast fillet- 250g
- Cheese (we used shredded mozzarella)- 1/2 cup (but you can increase or decrease as per your liking)
- Butter- 2 tbsp
For mushroom filling:
- Olive oil- 1 tbsp
- Minced garlic cloves- 2
- Onions (coarsely chopped)- 1/4 cup
- Mushrooms (coarsely chopped)- 1/2 cup
- Italian seasoning- 1/2 tsp
- Red chilli flakes- 1/2 tsp
- Salt to taste
Chicken seasoning:
- Italian seasoning- 1/2 tsp
- Dried oregano- 1/2 tsp
- Paprika- 1 tsp
- Garlic powder- 1/2 tsp
- Black pepper powder- 1/2 tsp
- Salt to taste
Method:
- Slice the chicken breast fillet in half. Place between two sheets of cling film and beat with a rolling pin until thinned (and increased in size). Set aside.
- Preheat oven to 160°C and line a baking dish with baking paper.
- For mushroom filling: In a non-stick frying pan, saute garlic and onion in olive oil until onions are translucent. Add mushroom and saute for 1 minute. Now add all the spices and cook until mushrooms have softened.
- For chicken seasoning, add all the spices in a bowl and mix well. Rub the seasoning on both sides of the chicken.
- Now sprinkle some cheese on the chicken, followed by the mushroom mixture, and topping it all with some more cheese. Roll the chicken like a burrito and secure with a toothpick. Place in a baking paper and top with a piece of cold butter.
- Bake for 30-35 minutes.
- Enjoy with a side of our spring salad.
