Spring Salad

If you checked out our easy pan-fried chicken recipe last week, you might have noticed that we served it with a salad. This salad came paired beautifully with the chicken. It combines crunch with a flavorful vinaigrette that intensifies the taste of each salad ingredient. What we loved best was the spicy and tangy flavor of the vinaigrette with the sweetness of apples. While this salad can be eaten on its own, we love it best with fried chicken or hamburgers.

  1. Olive oil- 2 tbsp
  2. Lemon- 1/2
  3. Red chilli flakes- 1/2 tsp
  4. Mustard seeds- 1/2 tsp
  5. Salt to taste
  6. Black pepper to taste
  7. Crushed garlic- 1/2 tsp
  8. Ice burg lettuce- 1 cup
  9. Red pepper- 1/2 cup
  10. Cucumber- 1/2 cup
  11. Apple- 1/2 cup

  • To make the vinaigrette, combine olive oil, lemon squeeze, red chilli flakes, mustard seeds, salt, black pepper, and crushed garlic. Mix together and set aside.
  • In a large bowl, add ice burg lettuce, thinly sliced red pepper, cucumber, and apple.
  • Pour the vinaigrette over the veggies and apple. Toss everything until well combined. Enjoy!
